About this place
When the Nakasu-yatai tonkotsu ramen arrives, a touch of spicy red paste sits right in the centre of the bowl. The cloudy pork broth carries a mellow, rounded richness without feeling overly heavy, and dissolving that red sauce bit by bit introduces a pleasant, sharp edge. When purchasing your ticket, you can specify noodle firmness for the ultra-thin strands that catch the broth so well; opting for harigane (extra-extra firm) or barikata (extra firm) keeps a brisk chew that accentuates the savoury soup.
Between slurps of that first serving, it is worth calling for a kaedama—a fresh portion of noodles. Dropping the piping-hot refill quickly into the steaming broth lets you finish the bowl at a different pace with renewed texture. Layering on toppings such as crunchy wood-ear mushrooms, a seasoned soft-boiled egg, or spicy cured cod roe allows you to customize the bowl in true Hakata style.
Beyond noodles, the menu features substantial rice dishes like garlic-punched sutameshi and heavily portioned stamina fried chicken bowls, alongside soupless aburasoba and spicy miso tonkotsu ramen brewed with 14 spices. Located just outside the east exit of Oimachi Station and open from 10:00 in the morning until 4:00 the next morning, it is as practical for a brisk lunch between work tasks as it is for wrapping up a late night out or satisfying late-night hunger.
